Recipe: No Flour Banana Blueberry Muffins!

I mentioned these during the radio show and want to share the love!

  • 2 bananas
  • 1 cup blueberries
  • 1 cup peanut butter (I used creamy)
  • 2 eggs
  • 1 tsp baking soda
  • (I added 1/2 cup of walnuts and a dash of cinnamon and they were DEEEELICIOUS!!)

Mix all ingredients in a bowl and fill muffin tin about 3/4 of the way full.

Bake at 350 for about 15-20 minutes. Keep an eye on them... they'll start to split and brown on top when they're done!
